Description
Flat Iron steak (also known as Top Blade) is an amazing steak. Salt and pepper it and sear it at high temp on the grill, or use your favorite marinade and sear it. This is the only cut of meat which seems to get better the longer you grill it. I set the grill at 450 degrees and sear it 7-8 minutes on each side. Seems excessive, but it works!
